Tah Dah: My Dinner!


Delicious and only 4 points for a 1 cup serving. Here's my version of the recipe:

1. Buy pre-made pesto (my adaptation since I don't have a food processor and can't make homemade pesto).

2. Mix in 1 oz. of goat cheese

3. Sautee 1 pound of scallops, about 3 at a time. There are about 10 scallops in 1 pound, you do the math.

4. Once sauteed toss in pesto.

The dish goes well with Pinot Grigio. Mmmm...
